This cheese is from the Basque region of South West France. It is made from 50% sheep and 50% goat's milk.Chebris is dense and smooth but melts in the mouth, revealing all its aromas. The sweetness of the ewe’s milk is enhanced by the mild walnut aromas of the goat’s milk. An elegant cheese, this will work wonderfully with a very dry Champagne.
