Description
Mimolette is traditionally produced around the city of Lille. In France, it is also known as Boule de Lille after its city of origin, or Vieux Hollande for being made to the tradition of Dutch Edam cheese.
Mimolette is a round hard cheese, with a bright orange paste, and a characteristic moon-like surface. When aged ,it delivers a more intense strong, tangy with citrus and roasted nut flavours .
Mimolette Extra Veille pairs extremely well with either dessert wines or lighter reds such as Rhones or Pinot noirs.
