Moliterno cheese is a hard pasteurised sheep's milk cheese from Sicily, Italy. The cheese is injected by syringe with black truffle paste. During the maturation period , the wheels are rubbed with vinegar and local olive oil. These flavours , combined with the truffle, spread throughout the cheese and balance the rich earthy notes of the sheep's milk
